所有储存面包的方式都一样?错!
冷藏是我们最常见的食物保鲜方式,凡是要避免食物坏掉,我们便很自然的把它往冰箱里塞。
那么其实多年以来你储存面包的方式是对的吗?
难道是什么面包都应该把它收在冷藏处吗?答案是,错!
其实面包种类繁多,不同的面包有不同的储存方式。然而并不是全部面包都是商业化面包,这些面包一般上添加了防腐剂,因此比较容易储存,储存期也较长。
让我们来告诉你不同面包的储存方式吧!

1.调理面包(如肉松火腿面包、热狗面包、汉堡包)

这类面包的保质期是最短的,使这类面包很快变质的原因并不是淀粉的老化,而是馅料(肉类、蔬菜)的腐败。这类面包如果不是当时立即吃掉,还是冷藏为宜。

2.硬壳面包(如法棍)Crusty bread such as baguette

硬壳面包出炉后,面包内部的水分会不断向外部渗透,最终会导致外壳吸收水分变软。超过8个小时的硬壳面包,外壳会像皮革般难以下咽。即使重新烘烤,也很难回复刚出炉的口感。因此硬壳面包的保存不能放入塑料袋,而要放入纸袋。

For crusty breads that put longer than 8 hours, the crust will be hard to swallow. Even after re-baking, it is difficult to restore the fresh texture. 3.含高油,高糖分面包 Bread with high content of oil and sugar

油和糖是很好的“天然保湿剂”,糖油含量较高的面包比较不容易老化,使面包保持柔软的口感,延长保质期。高油糖含量的面包,保质期比一般面包长,大约一个星期左右。
Breads with a high content of sugar and oil are less likely to age, It can help on keeping the bread soft and prolonging the shelf life. Breads with a high content of sugar and oil have longer shelf life than the normal bread.
4.如何储存我们的天然发酵面包 Howto store our sourdough bread?

- 随时保持气密 Stay airtight at all times
我们的面包不添加油糖,一旦透风口感味道都会受巨大的影响。面包会变得干燥,硬邦邦的!
Our bread does not add any oil and sugar, once it is ventilated, the taste will be greatly affected. Hence, the bread will become dry and hard!
- 冷冻 Freezing
天然发酵的面包不添加油糖也不含防腐剂,因此在室温可以收两天,冷冻可以收十四天。记得!是冷冻而不是普通冷藏。冷藏会加速面包中淀粉的老化,使面包干硬、粗糙、口感差。原因是低温会加速淀粉的老化,但如果冷冻就不一样了!当温度降低到0度以下的时候,淀粉的老化作用就大大放缓了。

所以,把面包放在保鲜袋以后,放进冰箱冷冻室,可以延长面包的保质期。要吃的时候取出来,在面包表面喷点水,重新烘烤解冻,或者蒸一下就可以吃了。
